Top Slovenian restaurants as selected by Gault & Millau

Gault & Millau in Slovenia

Gault & Millau is among the three most influential international guides in gastronomy. It is renowned for its toques awarded to restaurants around the world. Restaurants that meet Gault & Millau's criteria may obtain one to five toques and are featured in the guide. Slovenia has its own edition of this influential restaurant guide.

In 2026, Slovenia gained its first restaurant to be awarded five toques (chef's hats) by the Gault & Millau critics – Hiša Franko. In addition, 14 restaurants can take pride in having been awarded four toques, including two new ones. Another 36 restaurants have received three toques, with the number of all restaurants with the highest ratings being the highest ever. The team of anonymous critics visited more than 200 restaurants, with research into the culinary scene also reaching less exposed parts of the country, where new interesting stories are being created. This year's selection is also marked by a wave of young chefs and new names who are taking over restaurants and inns, building on tradition and raising the level of Slovenian gastronomy.

The culinary playground of one of the best chefs in the world, Ana Roš Stojan, is becoming synonymous with the excellence of Slovenian gastronomy. With its menu, creativity and ambience, Hiša Franko also convinced the Gault & Millau critics to award it five toques, making it the first Slovenian restaurant to achieve this.
