Haloze layer cake (gibanica)

Ingredients:

Leavened dough

  • 500 g flour, half coarse-grained (hard), half soft flour
  • 30 g yeast
  • 10 g salt
  • 1 tbsp sugar
  • 1-2 eggs
  • 40 g butter
  • 250 ml milk

Filling

  • 1 kg skuta (cottage) curd cheese
  • 200 ml sour cream
  • 2 eggs
  • 150 g sugar
  • 80 g steamed wheat meal
  • cinnamon

Topping

  • 200 ml sour cream
  • 2 eggs

Preparation

Use the ingredients for the leavened dough to mix and knead a dough with medium softness and let it rise. Once it has risen, roll it out and place it in a greased round earthenware mould or baking pan. Fill it with skuta curd cheese filling, pour over the cream topping, and bake it. Serve the layer cake (gibanica) still warm.
