Holiday scents from the kitchen of Ana Roš

Let your kitchen smell of the holidays with a recipe from the best chef in the world.

Time for culinary indulgence

During the holidays, the smell of delicious holiday treats spreads from the kitchen. Usually, these are traditional holiday dishes among which potica is the queen in Slovenia. How about you surprise your family and guests with something special? The best chef in the world Ana Roš revealed to us her recipe for a tasty soup which will not leave you cold.

Pumpkin soup with star anise and a chestnut dumpling

Ingredients (for 4 people):

CHICKEN STOCK

  • 500 g cooked chicken bones
  • 200 g soup vegetables (celery, shallots, carrots, parsley, celeriac)
  • Bay leaf
  • 2 cloves garlic
  • 1 teaspoon peppercorns
  • 100 ml white wine

Stew the vegetables, add the cooked chicken bones, add the wine and simmer. Add 300 ml of cool water and cook over a medium heat for 2 hours and 30 minutes. Strain.

SQUASH SOUP

  • 100 g leeks
  • 1 medium-sized orange Hokkaido pumpkin (approx.. 1 kg)
  • 1 l chicken stock
  • 100 ml olive oil

Heat the olive oil and soften the leeks. Add deseeded (but unpeeled) chopped pumpkin and sautée. Add the chicken stock and star anise which you have previously put on a string. Cook for approx. 30 minutes until the pumpkin is soft. Add salt, discard the star anise and blend the soup until smooth.

CHESTNUT DUMPLING

  • 100 g chestnut puree
  • 150 g cottage cheese
  • 1 small egg
  • Salt
  • Pepper
  • To breadcrumb: strong flour, egg, breadcrumbs
  • To fry: vegetable oil

Mix the chestnut puree with cottage cheese and egg, add salt and pepper, and form into dumplings of any size. Breadcrumb the dumplings Viennese style and fry in hot oil.

Pour the soup into warm bowls, place a chestnut dumpling in the middle and drizzle with pumpkin seed oil around the dumpling.
