Vivo Catering has been awarded the first eco certificate

Consumers who are aware of the significance of organically produced foods can choose among the increasingly wider range of certified products available on the Slovenian market; no such choice, however, existed in catering until recently. Vivo Catering, a company awarded the first eco-certificate among caterers, took the first step.

Consumers who are aware of the significance of organically produced foods can choose among the increasingly wider range of certified products available on the Slovenian market; no such choice, however, existed in catering until recently. Vivo Catering, a company awarded the first eco-certificate among caterers, took the first step.

At the international symposium held last January at the Faculty of Agriculture and Life Sciences, with the leading theme being organic foods in gastronomy, this Ljubljana-based caterer, an important co-creator of Slovenia’s image in culinary art, was awarded a certificate by the Institute for the control and certification of the University of Maribor, verifying the conformity of regulations concerning the preparation of dishes using organically produced ingredients.

According to Jerneja Kamnikar, Managing Director of Vivo Catering, preparing such dishes has represented an upgrading of their core activity in the period of the past two years in response to a rapidly increasing demand for such services. At the same time, catering for international events means promotion of Slovenia. The company often provides catering services for international receptions and congresses attended by several hundred people. In general, these are guests who are very much aware of the importance of serving eco- and health-friendly foods and therefore, event organisers tend to satisfy their needs.

“As far as certified dishes are concerned, they are not solely made of eco-friendly ingredients, but also involve a technological procedure, as this part of food preparation has to be carried out separately from the other and should be supervised on a regular basis”, says Jerneja Kamnikar, stressing that it is hard to obtain sufficient quantities of organically produced foodstuffs from Slovenian farms for major international events even if only part of the food served there is produced organically. Vivo Catering has made a step further by using organic table settings to complement the organic food served on such occasions.

Their certificate is certainly considered to be an incentive for other catering providers in Slovenia, given the fact that the Slovenian Convention Bureau is actively introducing green standards for more environmentally friendly business meetings in Slovenia.
