Slovenia's Zero-Waste Cuisine Featured in New 50 Best Discovery Videos

Two new videos showcasing Slovenia's commitment to sustainable gastronomy and zero-waste cooking premiered on the 50 Best Discovery social media channels last weekend. The videos are part of an ongoing campaign delivered by William Reed, the company behind the globally recognised 50 Best brand, in partnership with the Slovenian Tourist Board.

The partnership began last year with editorial content on zero-waste gastronomy published on the 50 Best Discovery platform and has now expanded to include a series of engaging social media videos.

The two short films highlight real examples of how Slovenia's chefs embrace the philosophy of zero-waste cooking. At Hotel Plesnik, nestled in the heart of the Logar Valley, chefs Janez Bratovž and Tom Čopar demonstrate what it truly means to respect every ingredient. Working with an entire lamb, they show how each cut, bone and trimming has its own purpose. Through craftsmanship, technique and seasonal flavours, every part is transformed into a carefully considered dish, proving that zero-waste cooking is as much about creativity as it is about discipline and respect for nature.

The second video takes viewers to the family-run Gostilna Repovž in the Dolenjska region, where chefs Meta and Sabina Repovž reveal inventive ways of using parts of vegetables that are often discarded. Carrot peels are dried and ground into a powder that enriches a purée, while carrot tops are transformed into aromatic herb oil. Here, zero-waste cooking is not presented as a limitation but as a source of inspiration, innovation and flavour.

 


The campaign further strengthens Slovenia's reputation as a sustainable gastronomic destination, where zero-waste principles are not simply a trend but an integral part of everyday culinary practice—from Michelin-recognised restaurants to family-run inns. By expanding the campaign across the 50 Best Discovery channels, Slovenia continues to position itself alongside destinations shaping the future of responsible gastronomy through thoughtful use of local ingredients, respect for nature and a strong culinary heritage.
