Doppler Wine House Opens a New Fine Dining Restaurant

Perched on Kozjak above Pesnica, on a hill with sweeping panoramic views, Doppler Wine House is entering an exciting new chapter. At the estate where four generations have cultivated wine, a fine dining restaurant has now opened its doors. In a striking contemporary architectural setting, the family’s rich winemaking heritage meets modern gastronomy under the guidance of young chef Jurij Daolio.

Doppler Wine House is recognised as a modern winery with more than 200 years of tradition, continuously led by the same family. What makes the story even more distinctive is that the vineyard has been managed by women for three generations. In recent years, owner Mihaela Krsnik Kopše has steered the estate towards sustainable, environmentally conscious viticulture, refreshed the brand identity and created space for new ideas – now further developed by her daughters Lina and Lana.

The vision of a restaurant had long been part of the family’s aspirations. With the support of European funding, the old building was replaced by a new architecturally refined structure that preserves a warm, welcoming atmosphere while framing the breathtaking views stretching all the way to the Austrian border.

Doppler House of Food

The kitchen is led by Jurij Daolio, a chef of the new generation who honed his craft over the past decade in prestigious European restaurants awarded two and three Michelin stars, including renowned establishments such as Amador, Fred and Ocean. He now brings his international experience and the discipline of the world’s top kitchens to the heart of the Doppler vineyards.

His culinary philosophy is grounded in seasonality, local ingredients and deep respect for the environment in which he creates. The rhythm of the menu is guided by the seasons and by carefully selected local and Slovenian ingredients. Through flavour, guests are invited on a culinary journey – from the sea, across the Karst plateaus, to the aromatic forests of Štajerska.
