From Family Winery to Fine Dining Destination

In Rogaševci, the Gjerkeš family has turned their nearly century-old estate into one of Prekmurje’s top culinary destinations. The story began in 1992, when Matija and Hilda planted their first vines and restored the old farmhouse. Their son Leon later added a modern wine cellar, and today the estate is run by sommelier Matic Gjerkeš, who continues the family tradition with a modern spirit. Though winemaking remains their foundation, the Gjerkeš family now offers a refined dining experience that draws guests from both sides of the border. “Passion and guest satisfaction are what matter most,” says Matic Gjerkeš.

Winter Preserves and Wine: A Recipe for a Flavorful Autumn

Autumn days at Slovenian markets reveal the richness of seasonal produce – from juicy apples and pears to carrots, beets, fragrant herbs, mushrooms, and freshly pressed olive oil. It’s the season of winter preserves, when kitchens fill with the aromas of pickled vegetables, jams, and cucumbers that will warm hearts through the long winter months. Among all the flavours, homemade jam holds a special place – simple yet full of memories. With fresh fruit, a little sugar, a splash of lemon juice, and patience, it becomes a natural sweetness that brings the scent of home to every bite.

Liquid Gold of Autumn: When Olives Tell Stories of Sun and Tradition

In Primorska and Istria, autumn days bring the olive harvest – one of the most beautiful symbols of the Mediterranean way of life. The olives are hand-picked or with gentle shakers, keeping the fruit intact and full of flavor. The finest extra virgin olive oil is produced through quick processing at low temperatures and without additives, preserving its fruitiness, freshness, and signature spiciness. Every drop of this liquid gold tells a story of sun, stone terraces, and the patient work of generations.

Three knives, one Ana

Slovenia’s culinary icon Ana Roš claimed 2nd place in the world at The Best Chef Awards 2025 in Milan. With her bold creativity that intertwines wild herbs, local cheeses and Soča Valley trout, she continues to prove that Hiša Franko is much more than a restaurant – it’s an experience of nature, tradition, and imagination. What makes this achievement even more remarkable is that Hiša Franko has not only earned the runner-up spot but has also, since the very beginning of the awards, maintained its prestigious “three knives” distinction – the highest recognition in The Best Chef system, symbolizing mastery, consistency, and peak creativity. Slovenian gastronomy shone even brighter in Milan: Milka from Kranjska Gora (chef David Žefran) and COB from Izola (chef Filip Matjaž) both received the two-knives distinction, while Luka Košir from Grič earned one knife – honors that highlight the growth, authenticity, and exceptional creativity of Slovenia’s contemporary culinary scene.
