Michelin Guide Slovenia 2023: Celebrating sustainable excellence

Slovenia, with its pristine natural beauty encompassing forests, mountains, and rivers extending to the Adriatic Sea, sets the stage for unique gastronomic stories.

The latest Michelin's article, titled "Slovenian Gastronomic Greenprint", underscores the nation's commitment to preserving its pristine nature. The essence of Slovenia's "green DNA" is evident in its diverse regions—the Alps, the Mediterranean, the Karst, and the Pannonian Plain—all seamlessly woven into a picturesque green tapestry. Ana Roš, the chef at Hiša Franko in Kobarid, Slovenia's first three Michelin-starred restaurant, explains: "Just as the Slovenian woods and rivers are green, so too is the Slovenian approach to life – and therefore, by extension, Slovenian food. Our gardens, woods and meadows are essential to us".

The article concludes by introducing the seven restaurants awarded the Michelin green star for sustainability in 2023, celebrating their dedication to culinary excellence and environmental consciousness. The total of 59 Slovenian restaurants included in the Michelin Guide for Slovenia 2023 reflects the nation's vibrant gastronomic scene, where sustainability takes centre stage.
