Michelin article about Gostilna Ruj in the Karst and Hotel Jožef in Idrija is out!

A Michelin Guide journalist visited Michelin-featured Slovenian restaurants in October 2022. The latest of the six articles is about the two BIB Gourmand labelled restaurants, Gostilnica Ruj in the Karst region and the Jožef hotel restaurant in Idrija. 

Idrija žlikrofi, bearing both national and European traditional specialty labels, are prepared by hand-rolling small balls of potato and placing them on the dough, which is folded over the potatoes. The dough is then cut to form a kind of ravioli, with a small indentation in the middle to give the žlikrofi distinctive shape. This simple but tasty pasta is a symbol of Slovenia that has been passed down from generation to generation. And Hotel Jožef, described in the latest Michelin article, is the place to go, if you want to taste this dish (and also many other specialties). 

Another restaurant described in the article is Gostilna Ruj in Dutovlje, close to the UNESCO listed Škocjan Caves. The restaurant is a worthwhile stop, taking guests back in time as its varied flavours tell the story of the region and its inhabitants. Peter Patajac is more than just the owner of a family restaurant, he is a chef and also the custodian of a traditional cuisine that showcases a unique culture.
