Michelin publishes a video about chef Luka Košir

Last October, the film crew of the Michelin guide visited Slovenia and recorded three videos with master chefs. We share with you the first video, in which the Michelin team talked to chef Luka Košir from Gostišče Grič, last year's new winner of one Michelin star.

Gostišče Grič, located in the village of Šentjošt above Horjul, has progressed from BIB Gourmand (in 2020) to one MICHELIN star in 2021. Luka Košir's virtuoso dishes highlight the best local products, vegetables from his own fields and ducks raised by his father-in-law, who was the first in the country to receive an organic certificate.

As much as 80% of the fruits and vegetables used in the kitchen are grown in their fields. In addition to fresh ingredients, they love to play with traditional and modern food storage methods. They pickle, salt, dry and ferment a lot. They believe that in this way, you can offer your guests a piece of nature even in the colder months, when nature rests. They also use food of local origin, with the exception of wild-caught fish from the Adriatic Sea.

To further enrich and personalize his creations, Luka likes to add aromatic touches that he collects in the forest.

Through the eyes of Michelin journalists, the Slovenian culinary tradition will be presented to the world public, drawing on the treasures of unspoiled nature and sustainable efforts that Luka Košir and his team take into account in their work. The restaurant also boasts a Michelin green star and the Slovenia Green Cuisine label.

In October, the Michelin film crew shot two more videos, one with Ksenija Mahorčič from Gostilna Mahorčič and the other with Leon Pinterič from Gostilna Rajh. A journalist from the Michelin Guide visited Slovenia in November and prepared six articles. Videos and articles will be published in the coming months.
