A Michelin video about world-famous Hiša Franko and renowned chef Ana Roš

After lockdown, Hiša Franko is reopening for visitiors. On this occassion, also the video taken by Michelin reporters in September last year, just before the restaurants closed, was launched. In the video, they talked to masterchef Ana Roš, Valter Kramar, the owner and house sommelier, Miha Rustja, Ana's picker of herbs and forest fruits, and Jeanne and Matteo, who supply the restaurant with produce from their farm.

The video also reflects many years of connecting with local providers and a long tradition of organic farming. Ana’s philosophy in the kitchens is that ingredients need to be local, no more than 10 to 15 kilometres from House Franko. “Be unique, be different, and be brave in expressing yourself. The kitchen of Hiša Franko is somehow always a surprise,” says Ana Roš.

Through the eyes of the Michelin journalists, the video present the world the Slovenian culinary tradition, which draws from the treasures of unspoiled nature and sustainable efforts that Ana Roš and her team take into account at their work.
