Ingredients (for one person):

  • 3 eggs 
  • Handful of herbs (50% feverfew, lemon balm, chives, fennel etc.)
  • Pinch of salt 
  • 2 tablespoons flour
  • 100 ml cold water


Whisk the eggs and water. Add the chopped herbs, flour and salt. Stir well and pour the batter into a skillet greased with one tablespoon of oil. Make sure the skillet is hot. Cook on both sides and serve with the local white polenta.
