Although polenta is not an original dish of this region, it was once staple food that substituted bread at most meals. It was made from white and yellow corn flour and it used to be food of the poor. Today it remains an important part of the everyday diet as a main course and, even more so, as a warm or cold side dish served with various meat and vegetable dishes.
