Povitnek is a roll made out of stretched dough that can be prepared in two ways. It may be a savoury side dish with meat, topped with the cracklings, or as a dessert sprinkled with sweet bread crumbs fried in butter. Cinnamon can also be added, if desired.

Ingredients for the dough:
• 500 g wheat flour
• 1 egg
• 1 tablespoon oil
• 1 tablespoon salt
• some lukewarm water

Ingredients for the filling:
• 500 g home made cottage cheese
• 2 eggs
• some sour cream
• a pinch of salt
• (sugar, if made as a dessert)

Preparation method
From the ingredients knead the dough and let it rest for half an hour. Then prepare the filling. When the dough is ready, roll it thin and spread the filling all over it. Roll the filled dough from both sides. Cut the roll into 15 to 20 cm long pieces. Wrap the pieces in a cloth and cook them in boiling salted water for 10 to 15 minutes. When done, take them out of the bowl and let tem cool down. Cut them into smaller pieces and serve them with a savoury side dish with meat or as a dessert.
