In Istria sausages are prepared from chosen pieces of pork meat and seasoned with a mixture of salt, pepper, wine in which garlic was soaked, bay leaves and rosemary. Sausages are dried for about two weeks. After that they can be either grilled, pan fried or boiled and eaten with sauerkraut and eggs. When they are dry enough, they can also be eaten raw.
