Idrija-style Mutton Sauce

Preparation method
Chop the meat in cubes. Fry onions in ft, add finely grated carrots, meat, and brown all together. Add some stock, but be careful not to add too much. Add spices, herbs, vinegar and simmer. When the meat is soft and all the liquid evaporates, sprinkle with flour, fry a few moments, then pour some more water and vinegar (or wine), and bring to boil.

Other soup vegetables can also be used together with carrots.

1,2 kg mutton
250 g onions
30 g sharp flour
100 g fat
200 g carrots
Meat stock (optional)
Some vinegar or wine
Salt, bay leaf, pepper, savory, thyme
