Soak the cod in water for at least a day so it tenderizes. Cook in pressure cooker for 2 hours.
Debone and clean the fish. Put pieces of cod in a blender together with salt, pepper, and olive oil (500 g of olive oil for 500 g of cod). If needed add stock. Fry 2 cloves of garlic in olive oil, add a spoon of flour and tomato puree. Stir and add the finish (cleaned and deboned). Add salt, pepper, and fresh chopped parsley when it is almost cooked. Serve with it is almost cooked. Serve with homemade polenta
