One of the best Slovenian low sweet or savoury baked festive breads made of stretched dough that is laid between seven cottage cheese and sour cream fillings.
Ingredients for dough
500 g mixed flour,
1 tablespoon vinegar
1 tablespoon white oil
a pinch of salt
1,5 dl lukewarm water
Make even and soft dough and leave it to rest. Spread it with the oil to avoid the crust.
1kg fresh cottage cheese
1/2 l thick sour cream,
2 tablespoon sugar,
2 eggs, vanilla ice to taste
Make the cottage cheese filling out of the ingredients.
Roll the dough on the baker’s peel. Stretch it a bit, so it hangs over the edge. Cut the hanging dough into 6 pieces. The lowest layer should be a bit thicker than the others. Spread the filling over Gibanica and cover it with another layer, press the edges and continue with the filling until all the layers are used. Generously spread the cream on the top of Gibanica and bake it in the baker’s oven.
Sprinkle it with granulated sugar before serving.
